2017 Caverio Founder's Collection
Each year the Caverio blend is Sextant's take on a Chateauneuf-du-Pape, Southern Rhone style blend. The 2017 speaks beautifully to this style, with immediate bouquets of rose petals, ripe strawberry and cherry on the nose. Pleasant spices on the palate are paired with a subtly jammy, soft tannin structure. Light hints of wet forest floor and fresh picked mushrooms join the conversation as this wine opens up, showing its truly unique complexity.

Winemaker Notes
Hand picked off of our RBZ vineyard in the El Pomar sub AVA of Paso Robles, the 2017 Caverio is 84% Grenache, 13% Syrah, and 3% Mourvedre. Each varietal is fermented and aged seperately in a mix on new and used French and Hungarian oak. We were particularly happy with the way our Grenach showed this vintage, so we chose to blend in a small portion of Syrah for tannin and Mourvedre to add depth to the aroma. Each varietal was barrel aged for 20 months before bottling, and we bottle age for nearly a year before release, enjoy!
