2019 Caverio Founder's Collection
The 2019 Caverio by Sextant is a layered symphony of aroma and flavor. Red plum, strawberry, cinnamon and nutmeg immediately open up in the glass. As it breathes you'll find notes of fresh potting soil and red clay. The palate has a watermelon like smoothness, with creamy tannin and structure that invites you back for more after every sip.

Winemaker Notes
Hand picked off of our RBZ vineyard in the El Pomar sub AVA of Paso Robles, the 2019 Caverio is 83% Grenache, 10% Syrah, 7% Mourvèdre. Each varietal is fermented and aged separately in a mix of new and used French and Hungarian oak barrels. We were particularly happy with the way our Grenache showed this vintage, so we chose to blend in just a small portion of Syrah for tannin and Mourvèdre to add depth to the
aroma. Each lot was barrel aged for 20 months before bottling, then aged in-bottle for nearly a year.
