2019 Paris Valley Road Paso Robles Cabernet Sauvignon
Several rousing swirls in the big bowl of a bona fide Bordeaux glass do well to exhibit the lavish profile. The current vintage displays blackberries, black currants, and espresso notes with structure, style, and finesse. Appealing hints of figs, plums, and briary add nuanced layers. Limber tannins and deft acidity allow the flavors to flow, flourish, and finish well.

Winemaker Notes
Our Cabernet Sauvignon was aged for 18 months in 44% new French oak and produced using traditional winemaking practices. We harvest the fruit at the peak of ripeness, balancing the right sugar content with robust flavor and natural acidity. Destemming and rigorous sorting remove excess leaf material and underripe fruit, leaving beautiful whole berries ready for fermentation. We cold soak for several days before pitching our desired yeast, allow heat to rise naturally, and cap fermenting temperatures at 85°F to optimize extraction. As sugar converts to alcohol and flavors intensify, we adjust pump overs and punch downs to match the tank's activity level. When we are satisfied that we have maximized the potential of each fermentation, the wine is separated from the grape skins and sent to barrels for aging.
