2021 Paris Valley Road Malbec

Malbec has proven well-suited to Paso Robles terroir, and the 2021 vintage is another example of potential coming to fruition. Black plums, black cherries, and boysenberries cascade on the alluring approach. Pliable tannins and vigorous acidity enable savory details to emerge as sage, tobacco, and mesquite appear. Fine inklings of mocha and baking spice linger on the pleasing finish.

2021 Paris Valley Road Malbec
Winemaker Notes
Our Malbec was aged for 18 months in 46% new French oak and produced using traditional winemaking practices. We harvest the fruit at the peak of ripeness, balancing the right sugar content with robust flavor and natural acidity. Destemming and rigorous sorting removes excess leaf material and underripe fruit, leaving behind beautiful whole berries ready for fermentation. We cold soak for several days before pitching our desired yeast, allow heat to rise naturally, and cap fermenting temperatures at 85°F to optimize extraction. As sugar converts to alcohol and flavors intensify, we adjust pump overs and punch downs to match the level of activity in the tank. When we are satisfied that we have maximized the potential of each fermentation, the wine is separated from the grape skins and sent to barrel for aging.
