Winemaker Notes
For the 2021 vintage of sparkling, we decided on albariño as our prominent base wine. This varietal, known for its vibrant acidity and bright fruit characteristics, offered a refreshing twist to our sparkling profile. Aged on lees in tirage for about twelve months before disgorging, this method highlighted the fruit characteristics and provided a pleasing roundness in the mid-palate for a smooth finish. The dosage was not overly sweet, preserving the wine’s inherent freshness and allowing its natural brightness to shine through.
