The Caverio, following in the footsteps of Châteauneuf-du-Pape, showcases Grenache as the primary varietal with Syrah and Mouvedre added for complexity, richness, and aromatics.  It features resplendent raspberries, strawberries, and plums as Asian spices and fragrant herbs become evident on the persistent finish.

 

~ Nicolo di Caverio was an Italian expert navigator who developed some of the first nautical charts of the Old World.  

 

The Passage focuses on Syrah’s full-bodied richness combined with Grenache’s layers of fruit and structure.  Mourvèdre is in the mix for earthiness and depth. Black pepper and smoky spices on the nose are joined by blackberries, raspberries, and boysenberries on the palate. Figs combine with cedar for forest floor notes on the lengthy finish.  

 

~ “Passage” is fittingly a navigational term that encapsulates and marks the end of a long journey.  

 

The Portolan is a unique blend of small lot fermentations.  Depending on vintage, the fruit may be fermented in new barrels with whole-cluster non de-stemmed fruit, or a co-fermentation of multiple varieties such as Syrah and Grenache or even Syrah and Viognier.  Extracted flavors of blackberries, black currants, and cassis are layered with kirsch, mesquite, and sage.  Smoothly textured tannins provide a lingering finish as black tea and ganache appear. The winemaker and the cellar master select the best 5 barrels from the entire winery to create this exquisite blend.
